Comforting Onion Egg Drop Soup (Easy 15-Minute Recipe)

There’s a reason every culture has its own version of egg drop soup—gentle broth, silky eggs, and tender onions that feel like a hug from the inside out. Onions aren’t just flavorful—they’re packed with compounds that support the immune system and clear congestion. Bone broth brings both minerals and comfort in every sip, plus it’s one of the easiest proteins to digest when your body just wants something gentle. This is a follow-up to my blog about the stomach bug, but it’s a great one to whip up at any time, during the colder months, especially. Enjoy!

Comforting Onion Egg Drop Soup

Equipment:
  • 4.5 quart min. soup pot
  • cutting board and knife
  • large spoon
  • small bowl
  • fork or whisk
  • ladle

Ingredients: 
  • 2 T. butter or olive oil
  • 1 large onion sliced, I like sweet onions, but any will do. You can even use green onions in a pinch!
  • 2 quarts chicken stock
  • 4 - 6 eggs
  • salt to taste
  • white pepper (optional) to taste

Instructions:
  1. Thinly slice onions.
  2. Melt butter in a pan on medium-low heat. Add onions to pot and cook until softened or desired texture. Onions will soften more later when cooking in broth.
  3. Add stock and increase heat to bring liquid to a gentle, rolling boil.
  4. Crack eggs into a small bowl. Once the broth has reached a gentle, rolling boil, lightly whisk the eggs and gradually pour them into the hot broth while gently stirring. The eggs will quickly cook into the recognizable “eggdrop” strands.
  5. Reduce or turn off heat. Add salt and white pepper to taste. The white pepper is especially good to help “sweat out” whatever your body may be battling.


Storage and Sharing:

This keeps well in the refrigerator for a couple of days and travels well in quart jars to those in need!s.
